Preserving Eggs: A Step-by-Step Guide to Water Glassing for Long-Term Storage

Introduction:

Springtime is here, and our chickens are starting to lay more than we can eat! I bet yours are too.  In this article, I will explain how to water glass eggs for long-term storage. It is an uncomplicated process that can help you keep your eggs fresh for up to two years!


Materials Needed:

To get started, you will need a few things that you can easily find at Walmart, your local Home Improvement Center, or even on Amazon. Here is what you will need:

- Calcium hydroxide (also known as hydrated lime or pickling lime)

- A bucket with a tight-fitting lid

- A half-cup measuring cup

- A gallon of water

- A whisk

- Fresh farm eggs


Step 1: Prepare the Solution

Start by measuring a half cup of pickling lime and adding it to a gallon of water in your bucket. Mix it well with a whisk until it is fully dissolved.


Step 2: Add the Eggs

Make sure your farm eggs are fresh, clean, and free of any debris. Carefully place them in the solution, trying to keep them tip down if possible. The solution should cover the eggs completely.


Storage:

Seal the bucket with the lid once all your eggs are in the solution. Store it in a cool, dry place for up to two years. Remember to date the container so you know when you stored the eggs.


Step 3: Check for Freshness

Periodically check your eggs by opening the container and looking for floating eggs. If an egg floats to the top, it's no longer fresh and should be removed.


Usage:

These water-glassed eggs are best used for baking, making scrambled eggs, or pancakes. The yolks may not hold their form like regular eggs, so avoid using them for meals like over-easy eggs.
